How I Spent My Prep Day
Yes, it's Thursday. Yes, my prep day was last Sunday.
I am super beat, you guys, and I had a jam-packed day off/prep day. So I got everything done that I needed to do, and then I prepped my delicious, healthy food, and then I did. not. blog.
I got a little bit of sleep. I have no regrets.
And here I am now, catching up to tell what you what I did last weekend for this week! Writing this mid-week, let me assure you that this has all paid off just fabulously. My only regret is that I planned for a breakfast that I would have to prep a little bit each morning (avocado toast), and it turns out we're still working so hard that I would have done better to prep a completely hands-off breakfast for myself. Optimism is always lovely (nay, necessary!), but lesson learned for next week. Other than that, it's all paying off big time!
Here is what I've prepped this week!
- breakfasts: avocado toast; nothing fancy just mashed avocado on 7-grain bread with some spices on top
- lunch/dinner: puttanesca with cauliflower
- lunch/dinner: stir fried tofu with corn, green beans, and cilantro
- lunch/dinner: chicken, ham, and fennel pot pie (from the freezer)
- snacks: oranges and yogurts
And here's the full tally, including the food from the freezer and all the snacks...
Total monies spent for the entire week of meals: $39.49
Average monies: $5.64/day
Sleep wins, but food matters. It's all taken care of. Onward, we go!
