A surprisingly satisfying prep day
One quick post because I am pretty beat and need to keep getting rest!
I am hoping to get some posts up during the week about some of today's preps because two of the recipes today were completely new to me, and I am really happy with how everything turned out. If (and when) I do, I will update this post with links to those blog posts....
It took me a while to plan this week's menu because I am craving extra bonus flavor and treats right now, but knew I would barely be able to lift a finger on this day off. Trying two new recipes was something about which I wasn't feeling confident (I kept trying to talk myself out of it at the grocery store), but it actually pulled me out of my emotional doldrum today, and now I'm super duper looking forward to the week of meals!
Here is what I've prepped this week!
- breakfasts: breakfast burritos (tortillas, scrambled eggs, refried black beans, black olives, monterey jack cheese)
- lunch/dinner: ziti with eggplant and lamb ragu from the freezer (it is TIME!)
- lunch/dinner: soupy rice with chicken and vegetables (using this new recipe from Food & Wine)
- lunch/dinner: baked samosas with mint chutney (using this new-to-me recipe from Aarti Sequeria)
- snacks: pears and cheese
And here's what I spent!
Total monies spent for the entire week of meals: $48.49
Average monies: $6.93/day
And back to the couch I go!
