Kale Chips
Last week I went a little overboard with my portion sizes. I don't regret it, because I did have a handful of extra long evenings and I was grateful for the fuel. But I realized that this week I would need to lighten things up a bit. Enter: kale chips. They are absurdly easy, fun to eat, and full of whatever flavor you want.... they taste great plain, but they're also a great canvas. And they are really low calorie, if you're into that sort of thing.

This week, I went for smoked paprika all over these crunchy friends. I love the smoke and the kick of it, and it really lets the kale sing.

We all know how to make kale chips, right? They were super trendy a couple of years ago. I'm probably the only person still making them. Who cares? They're delish!
Essentially to make kale chips, you are dehydrating them. So, you toss them with some olive oil and the flavors of your choosing (today it was salt and smoked paprika). Make sure they're really thoroughly and evenly coated. Then into the oven at 275F for as long as it takes for them to get crunchy. Today, I checked at 20 minutes, and they definitely needed more time. 15 minutes later, they were on their way, so I rotated the trays. Fifteen minutes after that, they were done! Then, I let them cool all the way to room temp before storing them so they won't get soggy in the containers.
Here come crunchy times!
