Lemon Parmesan Roasted Edamame
Well, as I said, I've been hitting the vending machine for extra sustenance in the last week or so, so it's time for the big snack guns. This is a new-to-me recipe from Food52 for Parmesan-Roasted Edamame, and you could not have colored me more intrigued and excited when I found it. It should be just the flavor ticket to keep me from overspending on vending machine potato chips!

I read the recipe a couple of times before I dug in, and decided that my only modification would be to omit the garlic, being in shared space all the time as I am. Other than that, this looked straight forward and delightful!

This was so simple, following the recipe to the letter (except for skipping the garlic). I let the edamame defrost on the counter while I used the oven for other things, then stirred everything together, spread it out on the sheet pan, did a very thorough stir and flip at the halfway mark, and it was gorgeous!
I treated myself to a small handful of these when they were cool enough to handle and HOLY WOW they are amazing. Shoulda doubled the recipe!
