High Protein Waffles

I honestly can't remember where I found this recipe last year. I didn't save it at the time. It took about five second for it to implant itself in my memory where it remains to this day. Maybe it stays there because I make it a lot when I'm in rehearsals... it's gorgeously delicious brain food. Tons of protein to start the day, good fiber, simple preparation, and it's a waffle! What boxes don't these waffles check?

As I said, this recipe is just sitting at the tip my brain all the time waiting to be used. I could probably use the brain space for something else, but I don't think I'm doing myself any harm by hanging on to this knowledge. And it's the easiest possible recipe that only demands one grocery item, because everything else is just staples that I always have around. Happy times!

Cooking!

This recipe is as easy as heating up the waffle iron while tossing a pint sized container of (for me) Lactaid cottage cheese into a bowl with 2 cups of whole oats, 6 eggs, a friendly shake of cinnamon, and a half teaspoon of vanilla. I stick my immersion blender in there and whiz it all up. Then the waffle iron is hot, and I pour a sixth of the batter onto the plates and cook for 5 minutes. Repeat five times, and boom, the highest protein tasty waffle that there ever was.

I did tell you it was easy and amazing, didn't I? Promise kept!
