Kale and Cheddar Strata

Remember last week when I had to buy a loaf of bread at the grocery store for this meatloaf? And then rather than waste it, I decided to make eggs-in-a-hole for my breakfasts this past week?

Well, at the end of the week I still had half a loaf left, and I still refused to waste it!

But variety is the spice of life etc and so on, so this week, I'm mixing it up. It's still breakfast, but this time around, it's strata.

What's strata? It's breakfast bread pudding, basically. It's savory bread pudding. It's a great way to use up stale bread, is what I'm saying.

I don't have a go-to strata recipe, but this one caught my eye as I was tooling around the internet, so I went with it. Kale, cheddar, and garlic with some nice spicy dijon? Sign me up!

Strata is a deeply forgiving dish. The whole point is layering and using up leftovers. It's easy and it's delicious and it looks very, very fancy.
