This week's meals, plus I'm filling up the freezer!
And we're off!
Almost!
I go into the thick of it in two weeks, so I am getting ready here at home.
These posts are a little bit delayed. I did a huge batch cook to fill up my freezer and also cook for the week over the weekend. I have been so busy cooking that I couldn't find the time for writing!
This isn't the last time this will happen.
Cooking for this week's meals was about "what do I have on hand that needs to GET USED" in a way that excites me?
Here is what I've prepped this week!
- breakfast: egg-in-a-hole!
- Carrot Soup with Couscous
- Shrimp and Pork Imperial Rolls
- "Leftovers" Green Shrimp Salad on Whole Grain No-Knead Bread
Check out the individual posts for details about what groceries I had on hand versus what I had to buy. Here are the grand totals, including any snacks and fruit!
Total monies spent for the entire week of meals: $24.63
Average monies: $3.51/day.
A note about the breakfasts, because they are not getting their own post this week... I had to buy a loaf of commercially-made white bread for the meatloaf I was prepping into the freezer (see below), and I always have eggs, and I only have one early morning this week, so I'm making eggs-in-a-hole all week! Which I love! Huzzah!
And here's what went into the freezer to enjoy down the road!
- Potato Gnocchi
- Pork and Shiitake Dumplings with Baby Bok Choy
- Chicken, Ham, and Fennel Pot Pie
- Umamibomb Meatloaf
- Quick and Easy Lamb and Barley Soup
- Slow Cooker Pot Roast
- Baby Babkas
I think I'll need to do one more big batch cook before I'm fully out of real estate in the freezer. Stay tuned!
