Curry-Spiced Carrot and Cauliflower Soup
This is the second week of a two-week stretch between days off. We're not in tech yet, so I am still eating light for dinner. So last weekend, I thought about what is in my freezer, and accepted that nothing is light enough for a rehearsal-mode dinner. But the freezer was full. So last weekend, I made gnocchi with mushroom ragu, clearing space for a soup to freeze for enjoying now!

A friend shared this recipe for Spiced Carrot Cauliflower Soup from Weelicious via Epicurious. I read it. I thought it sounded wonderful. I didn't change a thing. I licked the ladle entirely clean when all was said and done. I licked the bowl clean tonight after dinner.

I actually had not anticipated that it would be quite as light as it is. It tastes and feels hearty! I'm not mad about the lightness... I have been snacking a bit extra on various and sundry things brought into rehearsal, so this may help restore some balance.

This is a very quick, very forgiving recipe, so I am incredibly grateful to my friend who shared it. While I sweated the onions, I dissolved the bouillon. Then, everything went into the pot. Simmer, simmer, test veggies, almost die from heavenly smell in the kitchen, blend. Ladle into freezer-safe containers, let cool on the counter, set in the freezer for the week!
Yesterday morning, on the day that would have been but was not my day off, I transferred the frozen soup to the refrigerator to safely defrost before heading into work. This evening when I got home from work, I portioned it out into five containers and.... one real bowl! An opportunity to eat out of a real dish while in rehearsal mode! Such luxury! And, as I said, I licked the bowl clean. No delicious drops wasted.
