I wanted to solve the leftover mint situation that making my favorite salmon would create, so I went hunting for minty snacks on the internet. Enter: my new favorite fruit salad from Gourmet.

There was nothing to change with this recipe! It is perfect for me this week just as it is.

Knowing that the simple syrup needed time to cool so it wouldn't cook the fruit, I prepped it last night as I was simmering the chile sauce for my posole. Then today, all I had to do was cut the fruit and portion out the syrup. I shook the fruit salads with the syrup in their individual tupperwares, and into the fridge they all went.

I can't believe this is my first time with this fruit salad. I'm in love!
