Umamibomb Meatloaf with Lemony Green Beans
It was time to pull some of the Umamibomb Meatloaf out of the freezer. I wanted it, and I wanted it now!
So, all I had to do was ask myself, what veggie am I craving right now? I knew I had a lemon in the fridge that needed to be used (after using half of the zest two weeks ago for my galettes, and half of the zest for this week's edamame snack), so my brain skipped happily to green beans.

I had a lot of work to do on this day off, so I was trying to keep things in the kitchen pretty simple. I actually ended up buying steam-in-the-bag green beans. They are a little more expensive than bulk green beans, but this way I wouldn't have to pick through them and trim them all. A little gift to myself from myself! Thanks, self!

I mean, come on, I barely even cooked for this today! I steamed the green beans in the microwave, then opened up the bag into a bowl, stirred in a tablespoon of butter and the juice of half a lemon, and dished up a portion right then and there for today's lunch! I couldn't wait another minute!
