Overnight Oats with Banana and Dried Mango

Alrighty, it's wake up early every morning for the foreseeable future time, so I'm going to be prepping all of my breakfasts ahead.

This week, I have a portion left of last week's strata to enjoy tomorrow morning (the flu would not allow me to eat anything yesterday, so this is left from that). And also, my day off is swapped to a day earlier (and then I'll have a slightly longer run between days off next week). So I only needed to prep four breakfasts! That's great, because that's essentially my current speed (have I mentioned enough times that I have the flu?).

Because I needed to go easy this week, I quickly decided on overnight oats. They are so easy! And they are more than "overnight": they last a week in the fridge without over"cooking" because once the liquid is absorbed, that's it... they're ready when you are.

Overnight oats follow an easy and easily-played-with formula: whole oats + double the liquid + whatever the heck else you want. A lot of recipes online are basically breakfast dessert, which is of no interest to me. And almost all of them also are photographed in mason jars, which, like, cool mason jar, friend (I have mason jars for smoothies, so I guess I could cut down on the shade a bit).

For me, it was a matter of: what sounds good, and what do I have? I would have bananas, because I was going to buy a pile of them because THE FLU. And I have a ton of dried fruit, including some dried mango I thought I would snack on, but just have not yet.

Easy!

Cooking!

There's no cooking! I portion the oats into the containers, then follow with the liquid, and stir it all together. Then I plunk the "other stuff" on top (in this case, bananas and dried mango), put the lids on, and into the fridge they go.

I'll zap them for about 45 seconds at full in the mornings, and enjoy straight from the tupperware.
