Breakfast Tacos

I was going through what's in the fridge needing to be used up before it's too late, and kept circling back to the extra corn tortillas I have left from when I made green chicken enchiladas a couple of weeks back. Corn tortillas can live for a while in the fridge, but I never want to push my luck. Then, a couple of days ago, I overheard someone saying "TACOS FOR BREAKFAST? THAT IS TOO FAR."

Well. I happen to disagree. Breakfast tacos are the greatest. Frankly, I would say that in the time before breakfast tacos, we had not gone far enough.

I only had 10 corn tortillas left from the enchiladas, and I didn't want to buy more corn tortillas and keep myself going in this corn tortilla pickle, so that made it easy to scheme this as a one-taco per day breakfast plan. Then I went back and forth over fillings, and landed on the balance of cheddar (I had a chunk left in the fridge from these baked eggs), one egg per taco, and some bacon. When I got to the store, there was an amazing sale on turkey bacon, so even though I do eat pork, I went with the cheaper (and healthier!) option, meaning I could double down on the bacon, meaning that these tacos are seriously bacon-heavy. No complaints!

As with everything this day off, I wanted things to be hands off and straightforward. So: bacon in the oven (12 minutes at 375F), shredded cheese to melt on the tortilla each morning, scrambled eggs with some seasonings, toasted corn tortillas: done.

In the mornings, I'll layer the tortillas with the fillings, zap it all in the microwave (not too long, otherwise the eggs will turn to rubber), then add hot sauce (of course). If I'm being honest, I almost ate one today. I should have made an "extra"!
