CSA Bounty

Holy Cow! My neighbors are going out of town for the holidays, and they offered me the gift of their "Medium" CSA Share!

When I say "Medium" it's because it's an enormous bounty of vegetables. This week's share included the following:

  • 3lb butternut squash
  • 2 cabbages
  • 3lb sweet potatoes
  • 2lb carrots
  • 2 heads bok choy
  • 2 heads romaine lettuce
  • 2lb brussels sprouts

It's a ton of food! Look how fresh and amazing everything is!

Bounty!!

This week, I'm in rehearsals. It's a light version of a rehearsal week because this week I'm rehearsing what's known as a "29-Hour Reading." You guessed it! That means that the project can only rehearse for 29 hours. So while I will still come early and leave late, it's not a full work week. Luxury!

I still want to be conscientious about making sure I have delicious filling lunches that have a good protein content, and that my dinners are light and interesting. I also want to ensure that I use as much of the CSA share as possible and that no food goes to waste. It's an excellent, tasty challenge!

With all that in mind... here is what I'll be eating this week!

Check out the individual posts for details about what groceries I had on hand versus what I had to buy. Here are the grand totals, including the yogurts and clementines!

Total monies spent for the entire week of meals: $22.94

Average monies: $3.27/day.

This is a lower amount than usual, of course, because the CSA veggies, around which I planned my whole week, were free to me. Extra bonus thanks to my neighbors!

PLUS, I still have a pound of carrots and two whole cabbages left from the CSA haul. I'll be using them soon so that they don't go to waste.
